Chestnuts are one of the most popular foods in fall and winter. What could be better than a bag of chestnuts? They warm your hands, heart and stomach. Or are you also a Vermicelles lover? The sweet dessert made from chestnuts always goes down well too. Chestnuts in soup form are somewhat less well known. Another great way to enjoy this versatile food. Are you a chestnut fan? Chestnut soup with ham (4 people)
Heat a tablespoon of butter or olive oil in a pan. Add a chopped onion, 80g of chopped celery stalks and a chopped carrot to the pan. Sauté until soft.
Now add 180g of defrosted chestnuts (buy frozen) to the pan and cook for two minutes. Pour in 7dl vegetable stock. Bring the stock to the boil and then reduce the heat. Leave everything to simmer for about 25 minutes. Now puree the chestnuts and vegetables.
Cut 100g of ham into slices and fry for about two minutes in a non-stick frying pan. Remove the ham and leave to drain on some kitchen paper. Whip 1.5dl half cream until fluffy. Stir half of the whipped cream into the soup and allow everything to heat up. You can add pepper, paprika or dried herbs such as basil, chives or parsley to the soup to taste.
Serve the soup in soup bowls and top with the remaining whipped cream and the fried ham slices. En Guete.
