Easter - Delicacies in the oven

That makes for a delicious feast

Pancakes with lemon balm (baking tray Ø 28cm / for 8 pieces)
Mix 200g flour, ½ tsp salt and 4 tbsp sugar in a bowl. Cut 100g cold butter into small pieces and add to the bowl. Rub everything between your fingers to form a crumbly mixture.
Finely chop 10-15 lemon balm leaves . Add these to the flour along with 0.5 - 0.75dl water and mix everything together to form a dough. Leave it to rest for 30 minutes.
Preheat your oven to 200 degrees. Grease the baking tray with butter.
Roll out the dough into a round on some flour and place it in the tray. Prick the dough firmly with a fork. Mix 1.5dl milk, 1dl single cream, 1 tbsp cornflour, 1 pinch of salt, 3 tbsp sugar, 1 tsp vanilla sugar and 4 eggs to make an icing. Pour it over the batter. Bake the cake for 25 - 30 minutes. Leave it to cool afterwards.

Easter wreath (for 12 pieces)
Mix 500g flour, 90g sugar, a pinch of salt and the grated zest of 1 lemon in a bowl. Dissolve 20g yeast and 1 tbsp sugar in 2dl lukewarm milk . Add the milk, 1 egg and 100g melted butter to the bowl. Knead everything into a smooth dough for 3 minutes. Cover and leave to rise in a warm place for 35 minutes.
Roughly chop 100g of dried cherries . Separate 2 eggs. Beat 2 egg whites until stiff, adding 75g of sugar . Fold in the cherries, grated lemon zest and 200g ground hazelnuts .
Line a baking tray with baking paper. Preheat your oven to 170 degrees.
Whisk 1 egg yolk with 1 tbsp milk.
Knead the dough again on a little flour. Roll it out into a rectangle measuring 30 x 50 cm. Spread the nut mixture evenly over it. Leave a 1 cm border free. Roll up the dough from the long side. Place the roll on the tray. Cut the roll lengthwise. Twist the two strands of dough together like a cord so that the filling is facing outwards. Shape the new roll into a ring and press the ends together well. Brush the wreath with the prepared egg yolk. Sprinkle the wreath with 20g flaked almonds. Leave to rise for 20 - 30 minutes. Then bake for 45 minutes.

Easter bunny biscuits (40 pieces)
Beat 125g soft butter and 90g sugar until fluffy. Beat in an egg and mix everything evenly. Add 250g flour and a little grated lemon zest. Knead everything into a dough. Divide it into two parts and refrigerate for 1 hour.
Preheat your oven to 175 degrees. Line a baking tray with baking paper.
Roll out the first ball of dough on some flour. Cut out Easter motifs such as bunnies, chickens, flowers, etc. Place them on the baking tray. Top with nuts, raisins or almonds as you wish. Brush the biscuits with beaten egg yolk and bake for 10 - 12 minutes. Allow them to cool slightly before lifting them from the tray. Work the second dough in the same way.

  • You can also flavor the dough with cinnamon or liqueur.
  • Add color and brush the biscuits with a colorful glaze once they have cooled.
