Delicious recipes with pellati
Canned tomatoes are anything but boring. The stars from the pantry can be used in a variety of ways. You can read our favorite recipes here.
1. tacos with vegetable filling
Ingredients: 1 onion, 1 clove of garlic, 1 tablespoon of olive oil, 1 small eggplant, 1 tin of tomatoes (peeled), 1 tin of red or white beans (pre-cooked), salt, pepper, hot paprika powder, taco shells, 1 bunch of coriander, 1 natural yoghurt
Preparation:
- Chop the onions and garlic into small pieces. Cut the eggplant into cubes.
- Sauté the onions and garlic with a little olive oil in a frying pan. Add the diced eggplant and toss everything together briefly in the olive oil.
- Add the tomatoes and beans and bring everything to the boil briefly. Reduce the heat to medium. Allow your taco filling to simmer for about 10 minutes, stirring occasionally. Season your taco filling with salt, pepper and paprika to taste.
- Chop the desired amount of coriander into small pieces. Put the natural yoghurt in a bowl and add the coriander. Season your yoghurt sauce with a little salt and pepper.
- Briefly heat the taco shells in the oven as described on the packet. Now you can fill your tacos with the spicy and yogurt sauce as desired. Enjoy the tacos fresh.
2. chicken casserole
Ingredients: 4 chicken breasts, 1 onion, 1 clove garlic, 1 red pepper, 200g mushrooms, 1 sprig thyme, 1 sprig rosemary, olive oil, 1 can tomatoes (peeled), 2 tbsp tomato paste, 100g olives (pitted), 200ml red wine, salt, pepper, bread on the side
Preparation:
- Preheat the oven to 180 degrees. Prepare the vegetables up to and including the mushrooms. Remove the thyme and rosemary leaves from the sprigs.
- Heat the olive oil in a large frying pan and place the chicken breasts in it. Season the chicken with salt and pepper. Fry it on both sides and then remove it from the pan.
- Add the pre-cut vegetables to the pan and fry briefly. Then add the tinned tomatoes and tomato purée. Add 1dl of water to the pan. Add the fresh herbs, olives and wine. Season the sauce with salt and pepper and stir well. Return the chicken to the pan. Cover it with the sauce.
- Place the pan in the preheated oven. The baking time is about 30 minutes. Serve the casserole with fresh bread - en Guete!
3. melanzane
Ingredients: 3 large eggplants, 2 tins of tomatoes (peeled), 1 onion, 2 cloves of garlic, 1 teaspoon of oregano (dried), 3 tablespoons of olive oil, salt, pepper, paprika powder, 2 packets of mozzarella, 200g grated Sbrinz cheese
Preparation:
- Cut the eggplants into thin slices and season with salt. Stack the slices on top of each other and weigh them down. This allows the eggplants to drain within 10 minutes.
- While they are waiting, finely chop the onion and garlic. Fry both briefly in 1 tablespoon of olive oil. Add the oregano and canned tomatoes. Cover and leave the sauce to simmer for five to ten minutes.
- Pat the slices of eggplant dry with a kitchen towel. Brush the remaining olive oil onto each slice. Fry the slices of eggplant for two minutes on each side.
- Preheat the oven to 180 degrees. Season the tomato sauce with salt, pepper and paprika. Cut the mozzarella into slices.
- Layer the ingredients in a large baking dish in the following order: fried eggplant slices - tomato sauce - mozzarella and parmesan. 5)Bake your melanzane for 30 minutes. A nice, light brown crust should form on the surface.
