Fine sauces for fall dishes

The icing on the cake

A fine sauce always goes well with a good piece of meat - whether in the game season or any other food season. If it is finely tuned to the dish, all the better! In the following article, we present typical game sauces that also go well with other types of meat.

Porcini cream sauce (serves 4)
Finely chop 1 onion and 1 clove of garlic and sauté in a little butter until translucent. Add 200g fresh porcini mushrooms (or 100g dried and soaked in water). Chop 1 handful of parsley and 1 tsp marjoram and add to the pan. Dust everything with 1 teaspoon of flour and mix the ingredients together well. Deglaze with 2dl stock and simmer the sauce gently. Add 1dl half cream and season the sauce with salt, pepper and paprika.

Grape and pepper sauce (serves 4)
Finely chop 1 onion and sauté in a little butter . Deglaze the onions with 1dl red wine or bouillon and 1dl game stock or bouillon. Allow to reduce for a few minutes. Add 1.8dl sauce cream and cook the sauce until it has a creamy consistency. Halve or quarter 200g of grapes. Remove the seeds and add them to the sauce. Season the sauce to taste with salt and pepper .

Elderberry sauce (for 4dl)
Boil 2dl red wine and 2dl game stock . Add 3 tbsp elderberry jelly and 3 tbsp sauce cream and reduce the sauce by half. Season with salt and pepper. Whisk the sauce vigorously with a hand blender or whisk and add 40g of cold butter in small pieces.

Gepflegte Saucen krönen jedes Gericht. Deshalb sollte man Wert darauf legen, sie selber zu machen und nicht einfach jedes Gericht in die ewig gleiche Fertigsauce zu tauchen. Es lohnt sich!
