New continent, new spices. In our soup series with recipes from four continents, we travel from Vietnam to Egypt and in today's article we get to know the soup Shorba Ads.
An insight into the history of Egyptian cuisine
Egyptian cuisine has been influenced by other countries due to historical events. Between 1517 and 1798, Egypt belonged to the Ottoman Empire. This left clear traces in the eating habits: Egyptian cuisine is strongly influenced by Turkish cuisine and also has culinary elements from Syria, Lebanon, Greece and Palestine.
Pulses such as lentils are typical of Egyptian cuisine, which is why we have selected the Shorba Ads soup, made from red lentils, for you.
Shorba Ads for four people
Ingredients
2-3 onions
1 piece of ginger approx. 2x2 cm
1 clove of garlic
1 fresh tomato or ¼ tin of pelati
1 tbsp rapeseed oil
400g red lentils
2 tsp ground cumin
2 liters vegetable or chicken broth
salt
½ tsp black pepper
1 squeeze of lemon juice
And this is how it's made:
Finely dice the onions, peel and finely grate or finely slice the ginger. Peel the garlic clove. Cut the tomatoes into cubes or prepare the pelati
Heat the oil and then add the onions, fry until translucent. Add the lentils, tomato, ginger and cumin. Press in the garlic and sauté all the ingredients. In the meantime, prepare the stock according to the packet instructions. Deglaze with the stock and simmer everything together for about 30 minutes.
Puree the soup with a hand blender and season to taste with salt, pepper and a squeeze of lemon juice.
