Baking for Easter

Easter is just around the corner. Have you already planned baked treats for it? If not, let us inspire you.

Easter cakes (For 12 9cm ramekins or 1 28cm diameter cake tin)
Mix 250g flour, 1 pinch of salt, 2 tbsp sugar and the zest of a grated lemon in a bowl. Cut 125g of cold butter into small pieces. Add it to the bowl. Rub everything between your fingers until you have a crumbly mixture. Add 1 egg and 2 tablespoons of cream . Bring everything together to form a dough - without kneading. Wrap the dough in cling film and chill it for 30 minutes.
Butter the moulds or tin.
Roll out the dough on some flour to a thickness of 2-3mm. If you want to make small flatbreads, cut out 12 rounds. Place the dough in the prepared baking tin or mold. Prick the bases with a fork and chill for a further 20 minutes.
Boil 2dl cream, 2dl milk, 100g raisins . Add 3 tbsp of durum wheat or corn semolina. Leave the semolina to soak for 15 minutes off the hob. Then leave to cool completely.
Preheat your oven to 200 degrees.
Mix 3 tbsp sugar, 3 egg yolks, the grated zest of half a lemon and 100 g ground almonds into the semolina mixture. Beat 3 egg whites until stiff and carefully fold in. Spread the mixture over the pastry bases. Bake the small flatbreads for 20-25 minutes and the large ones for 30 - 35 minutes. Leave the flatbreads to cool and dust with powdered sugar.

  • Instead of raisins, you can chop and use any other dried fruit.
  • Mix chopped pieces of chocolate into the filling.

Nutella bunnies (for approx. 20 pieces)
Beat 125g soft butter, 75g Nutella and 75g powdered sugar until creamy. Gradually stir 125g flour, 75g cornflour and 75g ground almonds into the mixture. Chill the dough in the fridge for an hour.
Preheat your oven to 190 degrees.
Roll out the dough on some flour to a thickness of 3-4mm. Cut out bunnies and place them on a baking tray lined with baking paper. Bake the bunnies for 10 minutes. Leave the cookies to cool completely.

  • Decorate your bunnies with chocolate icing or white icing. You can quickly make this yourself with powdered sugar and a few drops of lemon juice.
  • Color the icing with food coloring and make your bunnies colorful.
