Ingredients:
- Two medium-sized beetroot tubers, boiled and finely grated
- A jar of chickpeas, rinsed and drained
- A small bunch of parsley, finely chopped
- Two cloves of garlic, pressed
- A tablespoon of flour
- Salt, pepper, cumin to taste
- Olive oil for frying
For the herb quark:
- A tub of quark
- Fresh herbs of your choice, finely chopped
- A squeeze of lemon juice
- Salt and pepper
Preparation:
- Process the chickpeas, beetroot, parsley, garlic and spices in a food processor to a coarse paste.
- Mix in the flour until the mixture is malleable.
- Shape into small balls and fry in olive oil in a pan until golden brown or roast on a baking tray in the oven at two hundred degrees.
- For the herb quark, mix all the ingredients together and season to taste.
- Serve the falafel warm with the herb quark.
