Christmas muffins with bananas, almonds and dates

Ripe bananas, sweet dates and a pinch of cinnamon - these muffins are perfect for the Advent season.


The scent of cinnamon, roasted almonds and ripe bananas instantly brings the Christmas spirit into your home. These muffins do not contain any refined sugar and are very easy to prepare. The dates provide a natural sweetness, the almonds a bite and the spices a warm aroma. They taste great for breakfast, as a snack or with a cup of coffee. Baked with children, they will quickly become a new favorite recipe in your winter kitchen - the recipe also works without a food processor.

Recipe for 12 muffins

Ingredients:
- 3 very ripe bananas
- 2 eggs
- 100 millilitres rapeseed oil or melted butter
- 100 grams pitted dates
- 80 grams ground almonds
- 150 grams flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon gingerbread spice (optional)
- 1 pinch of salt
- A few chopped almonds or walnuts as a topping

Here's how it works:

1. preheat the oven
Preheat the oven to 180 degrees Celsius (top and bottom heat).

2. mash the bananas
Peel the bananas and mash them with a fork in a large bowl.

3. mix the ingredients
Add the eggs and oil and stir well. Chop the dates and add them to the mixture along with the ground almonds, flour, baking powder, spices and salt. Stir everything together to form an even batter.

4. pour into the tin
Pour the batter into the prepared tins and sprinkle with chopped nuts if desired.

5. bake
Bake the muffins in the middle of the oven for about 20-30 minutes. Test with a skewer: if the batter no longer sticks, the muffins are ready. Leave them to cool slightly in the tin, then leave to cool completely on a wire rack
