The beautiful, hot summer is slowly fading away and we can still enjoy the warmth.
But is it still too warm for you to prepare and enjoy a warm meal? Wouldn't you like a salad for dinner again?
Then why not try a soup - a cold one! Just like their hot relatives, cold soups provide nutrients and are very tasty.
Cold curry soup (serves 4)
Finely chop 2 shallots and 1 clove of garlic . Wash and quarter a tart apple. Cut out the core. Melt some butter in a pan. Sauté the onions until translucent. Cut the apple into fine pieces and finely slice 2 cm of peeled ginger . Sauté everything for another two minutes. Add the garlic and 1-2 tbsp curry powder, ½ tsp ground coriander and 2 tbsp flour . Mix everything together. Sauté everything for another minute. Pour in 8dl stock - vegetable or chicken stock to taste - and simmer for 15 minutes until soft. Puree the soup until smooth. Add 1dl of cream . Season to taste with a little lemon juice, salt and pepper . Chill the soup.
Divide the soup into four soup bowls and sprinkle with pumpkin seeds for an extra kick.

Cold tomato and pear soup (serves 4)
Boil some water . Cut 500g of tomatoes crosswise. Place them in the hot water for one minute. Then rinse them with cold water. Now you can easily peel off the skin. Remove the stem and cut the tomatoes into quarters.
Finely chop 2 onions . Wash and quarter a large pear. Cut it into small pieces. Melt some butter in a pan. Sauté the onions and apple in the butter. Pour in 7.5dl vegetable stock and bring to the boil. Add the tomatoes to the soup. Simmer everything for 20 minutes. Puree everything finely. Add 0.75dl apple juice . Season the soup to taste with salt, pepper and Tabasco . Chill the soup.
Divide the soup into four soup bowls and sprinkle with chopped basil.
