Cucumber soup with salmon and bread croutons (for 2 portions)
Cut 1 peeled cucumber and 1 tomato into small cubes. Puree them with a little salt, pepper, 1.5dl cold stock, ½ garlic clove and 2 lemon balm leaves to make a fine soup. Season to taste with 1 tsp white balsamic vinegar. Cut 100g salmon into thin strips and add to the soup. Divide the soup into two soup bowls.
Toast 4 slices of baguette or toast in the oven and cut into small cubes. Sprinkle over the soup and serve immediately.
Gazpacho (for 2 portions)
Prepare 1 red chilli pepper, 250g tomatoes and ½ cucumber and cut into small cubes. Add 125 ml tomato juice and ½ clove of garlic and puree everything together. Season to taste with salt, pepper, Worchester sauce and Tabasco and blend again. Pass the soup through a fine sieve and place in the fridge. The soup tastes best when chilled.
- Finely chopped diced tomatoes and a few drops of olive oil are a classic garnish.
- Bread croutons, puff pastry sticks or garlic bread are particularly delicious with it.
