Fine Christmas cookies - Chräbeli.

Chräbeli are a matter of taste. But homemade ones are still the best .

Prepare approx. 60 pieces :

Roast 2 tbsp. aniseed without fat in a frying pan. Then place the seeds on kitchen paper to cool.

Grate the zest of half a lemon lemon finely. Mix it with 250g powdered sugar, 2 eggs and 1 KL kirsch or lemon juice and stir the mixture until it is frothy (the easiest way to do this is with a hand mixer). Mix 300g floura pinch of baking powder and the roasted aniseed in a bowl. Add to the whisked mixture and mix well . Cover the dough and place it in the fridge for an hour.

Brush an inverted baking tray with a little butter.

Divide the dough into several portions and shape into rolls( approx. 1.5 cmin diameter ). Cut these into 6 - 7 cm long pieces and score them diagonally 2-3 times on one side with a kitchen knife. Bend the dough rolls into crescents and place them directly on the buttered baking tray. Leave the Chräbeli to dry at room temperature for 12 hours.

Preheat your oven to 140 degrees. Bake the biscuits in the lower half of the oven for 20 minutes.

You will see that the special aniseed aroma gives the pre-Christmas season a very special scent.

TipPrepare the biscuits with orange instead of lemon. This gives the biscuits an even more Christmassy taste.
