Nuts are a fine thing. The walnut is one of the best-known nuts in our part of the world. They are used in many different ways - in cakes, biscuits, Christmas cookies or as a flavoring agent in liqueurs.
How do you store tree nuts correctly?
If you collect the nuts yourself, crack them out of their shells. Wash them and leave them to dry in a dry and airy place. Place them on cloths or grids. The drying process takes two to six weeks, depending on the moisture content of the nuts. They are sufficiently dried when the skin on the kernels no longer peels off and the walls between the nut halves are hard . Pack the nuts in mesh bags. You can store them in a dry place for about a year. However, do not put them in the oven or dehydrator. If the tree nuts are heated above 25 degrees, they will become rancid and cannot be stored. If you discover mold on the nuts, always throw them away! Mold can be poisonous.
Honey tree nut biscuits (40 pieces)
Grate the peel off a lemon . Chop 150g of walnuts into small pieces. Beat 200g of softened butter until it forms peaks. Add the lemon zest, 100g honey, 120g powdered sugar and 2 pinches of salt to the butter and mix until smooth. Sift 200g wholemeal flour and 100g semi-white flour into the batter. Stir in the chopped nuts. Divide the dough into two halves. Shape each half into a 5 cm wide roll. Wrap in cling film and chill in the fridge for an hour. If you want to work more quickly, you can also place the dough rolls in the freezer for 30 minutes.
Preheat your oven to 200 degrees.
Unwrap the dough rolls and cut each one into 5-millimetre-thick slices. Place the biscuits on a baking tray lined with baking paper. Bake them for 10 minutes.

Tree nut bars (for 6 pieces)
Mix 60g low-fat quark, 1 egg, 1 tbsp cane sugar and 2 pinches of salt. Sift in 130g flour and 2 tsp baking powder and mix everything into a smooth batter. Finely chop 150g walnuts . Cut half a vanilla pod lengthwise and scrape out the seeds. Mix the vanilla pulp, 1 egg, the ground walnuts, 50g honey, 50g low-fat quark, the grated zest of half a lemon and its juice.
Preheat your oven to 180 degrees.
Roll out the dough into a rectangle 3 millimetres thick on some flour. Cut it into 6 equally sized corners. Spread the filling over the pieces of dough. Fold the beige edges of the dough around the filling to form rolls. Brush the rolls with milk. Bake for 30 minutes until golden brown. Leave the nut bars to cool completely.
