This recipe makes two jars of about 2 dl each
Grind 100g nuts of your choice (e.g. almonds, hazelnuts) very finely in a cutter. Roast in a non-stick frying pan over a medium heat for 5 minutes. Bring 2 dl full cream to the boil in a small pan, add the roasted nuts. Reduce the heat and simmer for about 5 minutes, stirring occasionally. Remove the pan from the heat and leave to cool for 5 minutes. Cut 2 vanilla pods in half lengthways and scrape out the seeds with a teaspoon. Add the vanilla seeds and 200g of crumbled dark chocolate to the pan and melt while stirring.
Finally, pour the nut spread into sterile, attractive preserving jars, seal well and decorate with a label of your own design.
The nut spread can be kept in the fridge for up to a week.
