In our soup journey around the world series, we are making our next stop on the coasts of Portugal and adding to our collection of soup recipes.
And because the best ingredient in cooking is love, we're taking a little time out today and mentally traveling to our destination:
Barren cliffs, stormy seas. Sea surf. You feel the fine crusts of salt on your skin and the warming sun on your face. A gentle wind blows through your hair. The sea air fills your nose and slowly mingles with the spicy aroma from the beach bar. Caldeirada de Peixe, the Portuguese fish soup, is on the menu today. Linger for a moment in the place where you imagine yourself to be. What else do you see, hear and smell?
And now it's time for the recipe, so that your palate also gets a taste of your trip.
The ingredients are easy to find and the dish is impressively simple.
Ingredients for 4 portions of Caldeirada de Peixe:
2 tbsp olive oil
2 onions, finely diced
2 cloves of garlic, finely chopped
2 red peppers, diced
1 yellow pepper, cut into cubes
1 green pepper, diced
600g tomatoes, diced or 1 tin of chopped tomatoes if you're in a hurry
2 tbsp paprika
salt and pepper
1 liter vegetable stock
5 dl Vinho Verde (or white wine)
You can also omit the white wine and increase the amount of stock accordingly.
800g fish fillet, diced (cod, salmon, fresh tuna or prawns)
1 bunch of chopped parsley
Heat the olive oil and fry the diced onions and chopped garlic. Add the chilli peppers and fry briefly.
Enjoy the aroma and let your thoughts take you back to your favorite place in Portugal.
Add the diced tomatoes or chopped tomatoes from the tin and stir all the ingredients with love. Season the vegetables with paprika, salt and pepper.
Then add the liquid and leave everything to simmer over a low heat.
Add the fish cubes and chopped parsley 5-7 minutes before serving.
Et voilà - the soup is ready to serve
Tip: A crusty baguette goes perfectly with this soup. Garlic bread also rounds off the dish perfectly.
