Warm soups are particularly popular in winter. Fortunately, they never get boring, as there are countless different and varied soup recipes. We have selected two special recipes for you that you and your family will love.
Creamy red cabbage soup with croutons (serves 4)
Clean and halve a small red cabbage (approx. one kilogram). Cut it into fine strips. Peel and dice 375g of potatoes. Then chop a small red onion and a clove of garlic.
Heat some olive or HOLL rapeseed oil in a large pan. Sweat the onion and garlic in it. After two minutes, add the red cabbage and potatoes, fry briefly and deglaze with 1.2 liters of hot vegetable stock.
Cover and simmer for about 20 minutes until the vegetables and potatoes are cooked. Then puree the soup until smooth.
Season the soup to taste with three tablespoons of lemon juice, a tablespoon of honey, salt and pepper .
To make the croutons, cut four slices of baguette from the previous day into cubes. Fry them well in olive oil. You can add a sprig of rosemary to the pan for a wonderful aroma.
Serve the soup with the crispy croutons as a garnish.
The special purple color makes this soup a delicious eye-catcher.

Carrot and coconut soup (serves 4)
Clean, peel and thinly slice 500g of carrots. Peel and finely dice 50g of fresh ginger. Sauté both in about 10g butter or a little water.
Add a tablespoon of sugar or honey and continue to cook briefly. Then pour in 600ml vegetable stock and 400ml coconut milk. Leave the soup to simmer over a medium heat for about 20 minutes.
Remove about a quarter of the carrots from the soup and divide them between four soup bowls. Finely puree the remaining carrots with the stock and coconut milk. Season the soup to taste with pepper, salt, coriander or coarsely chopped parsley.
Divide the soup between the four bowls and say En Guete!
