A vegan vanilla flan with caramel brings fine dessert enjoyment to the family table. The delicate cream with golden caramel notes is easy to make and will make your eyes light up at snack time or after dinner.
Flan is one of the classic desserts and can also be prepared wonderfully without any animal products . The plant-based version has a velvety consistency and a pleasantly mild vanilla flavor. The homemade caramel provides a subtle bitter note and rounds off the dessert perfectly.
Ingredients for four people:
1 vanilla pod
5 decilitres of plant-based milk (e.g. oat or soy)
3 tablespoons of sugar
1 pinch of salt
2 tablespoons of corn starch
For the caramel:
4 tablespoons of sugar
2 tablespoons of water
Preparation:
For the caramel, place the sugar and water in a pan and melt over a medium heat. Do not stir, but move the pan gently until a golden brown syrup forms. Pour into small ramekins and immediately spread evenly.
For the flan, cut open the vanilla pod and scrape out the seeds. Pour the plant-based milk, vanilla, sugar and salt into a pan and heat slowly. Stir the cornflour into a little cold milk and stir into the warm liquid. Bring to the boil, stirring constantly, until a creamy consistency is achieved.
Carefully pour the mixture into the ramekins over the caramel. Chill for at least four hours until the flan has set. Before serving, briefly place the ramekins in warm water and turn out onto a plate.
