Winter soups to warm you up

Hot for cold days

The best way towarm up from the inside is with a delicious soup .

Semolina soup (for 4 people)
Prepare 2 carrots and 200g celery. Cut them into 0.5 cm cubes. Prepare 6 spring onions and cut them into 0.5 cm wide rings. Heat 2 tbsp oil in a pan and fry 100 g durum wheat semolina in it. Add the carrots and celery and fry for a further 2 minutes. Add the spring onions, deglaze with 1 liter of vegetable stock and simmer the soup for 10 minutes. Add 1dl cream and 2 tbsp crème fraîche and stir everything in.
Season the soup to taste with salt, pepper and nutmeg . Divide the soup between 4 soup plates and sprinkle with chopped parsley.

  • Serve with crusty bread.
  • Instead of semolina, you can also use oats, millet flakes or other cereals.

Minestrone (serves 4)
Soak 150g dried borlotti beans for 12 hours. Then cook them for 40 minutes. Alternatively, you can use canned beans that have already been cooked.
Finely chop the green leaves from 150g of celery st alks and set aside. Cut the celery stalks, 200g waxy potatoes and 200g carrots into small cubes and 200g leek into fine rings. Finely chop 1 onion and 1 clove of garlic . Sauté everything in a little olive oil . Deglaze with 1.4l vegetable stock . Simmer the soup for 15 minutes.
Cut 2 tomatoes into small cubes. Add the tomatoes, borlotti beans and 100g Minestroe penne to the pan. Cook everything for a further 10 - 15 minutes.
Divide the soup into four soup bowls. Sprinkle the soups with a little grated Parmesan and the chopped celery greens.

Pea soup (serves 4)
Finely chop 2 onions . Cut 200g of floury potatoes into small cubes. Heat some olive oil in a pan. Sauté 800g green peas and the potatoes in it. Deglaze with 1 liter of vegetable stock and simmer the vegetables until soft. Puree the soup until creamy. Add 0.5dl coconut milk and season the soup with salt and pepper to taste.
Divide the soup into four soup bowls.

  • Decorate the soup with a dollop of whipped cream.
  • Boil some peas separately and add them to the soup.
