Crostini with avocado and goat's cheese (for 20 pieces)
Preheat your oven to 160 degrees.
Cut 1 baguette into finger-thick slices and place them on a baking tray lined with baking paper. Drizzle the slices with a little olive oil. Toast the slices of bread in the oven for 5 minutes.
Peel 2 avocados. Place the avocados, 200g of fresh goat's cheese and the juice of half a lemon in a bowl and mash everything with a fork to form a creamy mixture. Finely chop 1 bunch of chives and ¼ red chili pepper . Mix everything into the avocado mixture. Season to taste with salt and pepper . Using two spoons, cut dumplings from the mixture and place them on the slices of bread. Garnish the crostinin with short stalks of chives.

Salmon croissants (for 20 pieces)
Preheat your oven to 160 degrees.
Finely chop 200g of smoked salmon and 1 bunch of dill . Mix everything with 4 egg yolks and 100g crème fraîche. Season the mixture to taste with salt, pepper and a little lemon juice . Lay out a packet of rolled puff pastry. Cut lengthwise into three strips. Cut triangles out of the sheets. Whisk 2 eggs and brush the puff pastry triangles with them. Spread the salmon mixture over the thicker ends of the triangles and roll them up. Place the croissants on a baking tray lined with baking paper and brush them with the beaten egg. Bake for 20 minutes until golden brown.

Meatballs with lime dip (for 20 pieces)
Preheat your oven to 180 degrees.
Grate the zest from 2 limes and squeeze out the juice. Mix the juice, zest and 250g yogurt. Season the dip with salt and pepper . Mix 500g of minced meat with 2 eggs, 1 finely chopped onion, 1 chopped bunch of chives and 50g of breadcrumbs. Season the mixture with salt, pepper and paprika. Form small balls and place them on a baking tray lined with baking paper. Bake the meatballs for 10 - 15 minutes until cooked. Chop a bunch of parsley. Roll the finished balls in the parsley. Spear each ball with a toothpick. Serve with the dip.
