Cauliflower triple fine

Cauliflower not only impresses with its mild taste, but also with its versatility. Whether crispy, creamy or hearty au gratin - this popular vegetable is guaranteed to be a favorite on the family table.

Crispy cauliflower from the oven

Ingredients for four people:
1 large cauliflower
3 tablespoons of olive oil
1 teaspoon of paprika
1 pinch of salt
A little pepper
2 tablespoons of grated cheese

Preparation:
Divide the cauliflower into florets and place on a baking tray. Mix with olive oil, paprika, salt and pepper. Bake in a preheated oven at 200 degrees for around 25 minutes. Just before the end, sprinkle over the cheese and allow to melt until golden brown. Serve with a fresh leaf salad.

Creamy cauliflower soup

Ingredients for four people:
1 onion
1 tablespoon of butter
1 small cauliflower
2 potatoes
8 decilitres of vegetable stock
1 decilitre of cream
A little nutmeg
Chopped chives if required

Preparation:
Finely chop the onion and sauté in butter. Cut the cauliflower and potatoes into pieces and add. Add the vegetable stock and cook for about 20 minutes until soft. Then purée finely and season with cream and nutmeg. Serve with chives if desired.

Cauliflower gratin for the family

Ingredients for four people:
1 large cauliflower
2 decilitres of cream
2 eggs
1 pinch of salt
A little pepper
A little nutmeg
100 grams of grated cheese

Preparation:
Divide the cauliflower into florets and pre-cook briefly. Then place in a gratin dish. Mix the cream, eggs and spices and pour over the top. Sprinkle with cheese and bake in the oven at 180 degrees for about 30 minutes until golden brown. Serve with Gschwellti or a fresh salad.
