Chocolate Mousse with Aquafaba – A Light and Airy Treat Made Without Eggs

In the mood for a delicious dessert that’s surprisingly easy to make? Aquafaba creates a creamy chocolate mousse that delights young and old alike—and makes good use of food scraps at the same time.


Aquafaba is the cooking liquid from jarred or canned chickpeas. What often ends up down the drain is actually an excellent substitute for egg whites. When whipped, aquafaba develops a light, airy consistency and gives desserts a delicate, fluffy texture. The result is a chocolate mousse that not only tastes delicious but also brings a sustainable idea to the family kitchen. Plus , stirring, tasting, and decorating together is fun and creates wonderful family moments. Especially when served with fresh berries or a bit of grated chocolate, this dessert becomes an eye-catcher on any table.

 

Ingredients for four servings:
150 grams dark chocolate
120 milliliters aquafaba from a jar or can of chickpeas

Half a teaspoon lemon juice
A pinch of salt

1 tablespoon sugar

Preparation:
Carefully melt the chocolate in a double boiler and let it cool slightly. Place the aquafaba, lemon juice, and salt in a clean bowl and beat for several minutes until a firm, glossy mixture forms. Slowly sprinkle in the sugar and continue beating. Carefully fold in the melted chocolate, making sure to trap as much air as possible in the mixture. Divide the mousse among dessert glasses and let it set in the refrigerator for at least three hours.

Serving suggestion:
Garnish with fresh raspberries, strawberries, or cherries. Chopped hazelnuts or a few chocolate shavings also pair perfectly with this dessert.
