Rösti are one of the classics of Swiss cuisine and combine wonderfully with fresh spinach. Ingredients
500 g potatoes, waxy
200 g fresh spinach
1 small onion, finely chopped
1 egg
2 tbsp flour
Salt
Pepper
Nutmeg
HOLL rapeseed oil for frying

Preparation

Peel the potatoes, grate coarsely and squeeze in a clean kitchen towel to remove any excess liquid.

Wash and roughly chop the spinach and steam briefly in a little water, then drain well.

Mix the potatoes, spinach, onion, egg and flour in a bowl. Season with salt, pepper and nutmeg.

Heat the oil in a pan. Form small rösti from the mixture and fry over a medium heat until golden brown on both sides.

Drain the rösti on kitchen paper and serve warm.
