Conjure up a delicious vegetable curry with some fruit.
Ingredients
rice
Coconut oil for frying
Curry mix
Onions, finely chopped
Ginger cut into small pieces
Vegetables and fruit cut into bite-sized pieces
coconut milk
Salt and pepper
lemon juice
Preparation
Cook the rice in a pan.
Heat the coconut oil in a pan.
Briefly fry the curry in the oil. Take care not to burn the spice.
Add the onions and ginger.
Once the onions and ginger have sautéed a little, you can add the fruit and vegetables.
Fry everything together briefly and then add a little water.
Leave to simmer gently.
Then stir in the coconut milk.
Season to taste with a little salt, pepper and lemon juice.
