Cooking a delicious vegetable curry from leftovers

You can conjure up a delicious curry from various vegetable scraps that are no longer completely fresh!


Do you know this? Another week has passed and you haven't really gotten around to cooking? An aperitif here and an invitation to dinner there? A glance in the fridge reveals that your vegetables have seen better days. Even if the vegetables no longer look completely fresh, you don't have to throw them away. Conjure up a delicious vegetable curry with some fruit.

Ingredients

rice

Coconut oil for frying

Curry mix

Onions, finely chopped

Ginger cut into small pieces

Vegetables and fruit cut into bite-sized pieces

coconut milk

Salt and pepper

lemon juice

Preparation

Cook the rice in a pan.

Heat the coconut oil in a pan.

Briefly fry the curry in the oil. Take care not to burn the spice.

Add the onions and ginger.

Once the onions and ginger have sautéed a little, you can add the fruit and vegetables.

Fry everything together briefly and then add a little water.

Leave to simmer gently.

Then stir in the coconut milk.

Season to taste with a little salt, pepper and lemon juice.
